Cooking Instructions:

Swasdi Kulambu Chilli Powder is a versatile spice blend used to prepare various South Indian dishes, particularly gravies and curries. Here are some general cooking instructions for using Swasdi Kulambu Chilli Powder:

Ingredients:
- 2 tablespoons Swasdi Kulambu Chilli Powder
- 2 onions, finely chopped
- 2 tomatoes, chopped
- 1/2 cup tamarind extract (from lemon-sized tamarind)
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1/4 teaspoon fenugreek seeds
- A pinch of asafoetida (hing)
- Curry leaves
- Salt to taste
- Water, as needed
- Optional: vegetables, meat, or seafood of your choice

Instructions:

1. **Preparing the Tamarind Extract:**
   - Soak a lemon-sized ball of tamarind in warm water for about 15 minutes. Squeeze the tamarind to extract the pulp. Strain the tamarind extract to remove any solids and set it aside.

2. **Cooking the Gravy:**
   - Heat oil in a pan or kadai over medium heat.
   - Add mustard seeds and let them splutter.
   - Add cumin seeds, fenugreek seeds, and a pinch of asafoetida (hing). Sauté for a few seconds until aromatic.
   - Add finely chopped onions and curry leaves. Sauté until the onions turn golden brown.
   - Add chopped tomatoes and cook until they become soft and pulpy.
   - Add Swasdi Kulambu Chilli Powder to the pan and mix well with the onion-tomato mixture.
   - If using vegetables, meat, or seafood, add them to the pan and sauté for a few minutes.
   - Pour in the tamarind extract and add salt to taste. Mix well to combine all the ingredients.

3. **Simmering the Gravy:**
   - Add water as needed to achieve the desired consistency of the gravy.
   - Bring the gravy to a gentle boil, then reduce the heat to low and let it simmer for about 15-20 minutes, allowing the flavors to meld together and the gravy to thicken.

4. **Adjusting Seasoning:**
   - Taste the gravy and adjust the seasoning according to your taste preferences. You can add more Swasdi Kulambu Chilli Powder for extra spiciness if desired.

5. **Serving:**
   - Once the gravy is cooked to your liking, remove it from the heat.
   - Serve the Swasdi Kulambu Chilli Powder-infused gravy hot with steamed rice, idli, dosa, or any South Indian bread of your choice.

By following these cooking instructions, you can create a delicious and flavorful South Indian gravy using Swasdi Kulambu Chilli Powder. Adjust the spice level and ingredients according to your preference and enjoy the rich flavors of this traditional dish!
